Paula Pumpernickel Salted Caramel Liqueur by Sasse. Cream liqueur with a pinch of sea salt and intense caramel notes, sweet and salty, 17% ABV.
Paula Pumpernickel Salted Caramel Liqueur is a cream liqueur from the Münsterland region, produced by the Sasse fine distillery: first a pinch of sea salt, then numerous intense caramel notes, 17% ABV, 700 ml. Not a caramel sauce and not a toffee schnapps – a sweet and salty liqueur for the ice-cold glass and a scoop of vanilla ice cream.
The Salted Caramel Liqueur from Paula Pumpernickel thrives on contrast. Salted caramel is caramel to which a pinch of salt has been added. The salt subdues the sweetness and allows the roasted notes of the melted sugar to stand out more clearly. What you know as a candy, a spread, or a flavor of ice cream is available here in a bottle as a cream liqueur. A cream liqueur has significantly less alcohol than a spirit, here 17% ABV, and a soft, milky texture that carries the caramel. Sweet and salty is how Sasse summarizes the principle: opposites that attract. Imagine a late summer evening after a barbecue, there’s still some vanilla ice cream in the freezer, and someone asks if there’s any sauce for it.
First a pinch of sea salt, then caramel in many shades
The liqueur starts with salt. A pinch of sea salt is the first thing you taste, and only then does the caramel unfold, according to Sasse with numerous intense notes. The sweetness therefore arrives late, but is all the fuller for it, supported by the creamy texture. With 17% ABV, the alcohol remains quietly in the background. Well chilled, the salt stands out more clearly; at room temperature, the caramel becomes broader and sweeter. Of the three Paula liqueurs, this is the one with the most distinct contrast.
A note on the labeling: The Salted Caramel Liqueur contains milk. According to Sasse, the cream liqueur has a long shelf life, whether opened or unopened, if stored between 0 and 25 °C.
Ice-cold in a glass or straight over vanilla ice cream
Sasse recommends two ways to enjoy the salted caramel: serve it ice-cold or directly over vanilla ice cream. Ice-cold means putting the bottle in the fridge beforehand or adding a few ice cubes to the glass. Over vanilla ice cream, the liqueur becomes a sauce that seeps into the scoop as it melts. The salt ensures that the dessert remains lively despite the double sweetness. At 17% ABV, it is an alcoholic beverage, so it may only be sold to persons 18 years and older.
Until the next sundae, it is best to store the bottle upright in a cool, dark place.
Our tip: Sprinkle a few flakes of sea salt over the vanilla ice cream before adding the liqueur – the salt crunches, the caramel flows.
Paula Pumpernickel presents – Münsterland taste from the Schöppinger Berg
Under the name Paula Pumpernickel, a Münsterland food blogger introduces regional foods, including three cream liqueurs from the Sasse fine distillery since 2021. The brand emerged from a collaboration between Sasse and the Münsterland-Siegel association, of which the distillery is a founding member. In addition to the salted caramel, the range includes "Herrencreme" and milk coffee.
The distillery itself is located in Schöppingen on the Schöppinger Berg, with a farm shop directly at the distillery. Rüdiger Sasse manages the house, which is primarily known for cask-aged grain brandy (Korn). The Paula Pumpernickel Salted Caramel Liqueur shows that they also make dessert, and one with a pinch of the sea at that.
For sweet-and-salty fans, barbecues, and sundaes
The Salted Caramel Liqueur is the bottle for everyone who asks for salted caramel first at the ice cream parlor. After a barbecue, it is the perfect finish over vanilla ice cream, and as a gift, it is the bottle that gets people talking at the table. If you prefer it less salty, try the Milk Coffee Liqueur with its light caramel; what else the distillery bottles can be found on our Sasse page. Due to the milk, it is not suitable for allergy sufferers or those who live a vegan lifestyle. If you are looking for a tart finish, the Sechser Herbal Liqueur is a better choice.
