Generous: gluten-free organic cookies from Belgium
Generous started with an intolerance. Co-founder Christophe Harou cannot tolerate gluten. He founded the brand with his wife, Théodora, and Jean-Benoît and Aurélie Ghenne, who ran the gluten-free venue "L'Arrière-Cuisine" in Brussels. Since 2013, Generous has been baking organic, gluten-free cookies according to their own claims, first in Anderlecht, and today in their own atelier in Tubize in Walloon Brabant. The ingredients are organic, controlled by Certisys (BE-BIO-01), and the cookies are gluten-free with less than 20 mg of gluten per kilogram.
Every variety a character
At Generous, every recipe has a name and a personality. Forgetful Charlotte puts chocolate chips in the dough: the Charlotte Chocolat chocolate cookies come with Piedmont hazelnuts and fleur de sel. Strict Céline only smiles when everything is just right: the Céline Citron lemon cookies are crispy, slightly tart sablés with butter and lemon juice. Former sailor Victor fell in love with vanilla in Madagascar: the Victor Vanille vanilla cookies melt delicately. The Nicole Noisette hazelnut cookies are a croquant made from egg white, cane sugar, and 22% hazelnuts; according to the manufacturer, they are also lactose-free.
Oat cookies for breakfast
For morning grouches, there are the Martin Matin oat cookies: soft cookies with 32% gluten-free oats, raisins, and chocolate chips; according to the manufacturer, they are vegan and come in five 30 g portions. A breakfast cookie for your milk coffee or to take on the go. "Matin" is French for morning, and the character behind it bakes himself into a better mood with this cookie. Instead of butter, palm oil from RSPO-certified cultivation binds the dough, along with coconut flour and tapioca starch.
