Goufrais: the cool indulgence from the Three-Country Corner

Goufrais comes from Weil am Rhein, on the edge of the southern Black Forest, where Germany, France, and Switzerland meet. In 1993, Günter Keller and his son Michael developed the idea, and production has been ongoing since 1994. The name combines the French "le goût" (pleasure/taste) with "frais" (fresh/cool). The Gugelhupf shape is intended to evoke the Alsace, the homeland of Frank Keller’s mother. Today, Michael Keller runs the family business together with his siblings, Corinna Ermutlu and Frank Keller.

A Goufrais weighs 7.5 g and consists of coconut and palm kernel fat, sugar, and cocoa powder, entirely coated in cocoa powder on the outside. It is therefore a cocoa confection, not chocolate. The piece is firm and cool at first, then melts slowly and delicately, with a fine, intense cocoa flavor. According to the manufacturer, it is free from alcohol, nuts, and gluten; it contains milk (whey product) and soy. It is produced on the grounds of a former fruit farm: the mixture is poured into molds, cooled for two days, dusted with cocoa, and packed by hand.

Goufrais belongs in the refrigerator. The manufacturer advises letting the pieces sit at room temperature for three to four minutes before consuming.
