Heldenberger Apfelbiene: Apples and bees from the Wetterau
The name reveals what it's all about. Annkathrin and Holger Weiß tend to meadows of scattered fruit trees with old-growth stock on the slopes of the Wetterau in Nidderau-Heldenbergen, and their bee colonies are located in these same meadows. With fruit growing and beekeeping, they aim to revive old farming traditions. The business is a member of the Pomologen-Verein (Pomologists' Association) and has been operating according to Naturland guidelines since July 2014. The family describes itself as a small family business where everyone helps out.
Apple balsamic vinegar from the meadow orchard
For the balsamic vinegar, the business uses apples from old varieties such as Gravensteiner, Kaiser Wilhelm, and Boskoop. Many trees bear varieties from the 19th century or even older. The apples ripen on the tree for as long as possible and are harvested by hand. According to the producer, the vinegar is made using a traditional method without additives and has 5% acidity. An apple balsamic is not a grape balsamic from Modena, but a rounded, fruity vinegar made from apples. The organic apple balsamic showcases the pure apple fruit with clear acidity.
Apple balsamic with honey
The organic apple balsamic with honey contains 8% honey from their own organic apiary. According to the producer, the honey gives the vinegar a special mildness and subtle sweetness. The producer recommends both bottles for fresh summer salads and for seasoning savory dishes. We find they also go perfectly with lamb's lettuce with walnuts, lentils, and red cabbage in winter.
