Muesli made from sprouted grains: the breakfast bowl

Muesli is a mixture of cereal flakes, often supplemented with seeds, nuts, and dried fruit, which you mix with milk, plant-based drinks, yogurt, or juice. The idea was invented by the Swiss physician Maximilian Bircher-Benner around 1900 – his recipe consisted of soaked oat flakes and plenty of grated apple. In this category, you will find three sprouted organic mueslis from the Palatinate region and shredded coconut to top off your bowl.

What makes muesli sprouted

For sprouted muesli, the grains are soaked until they begin to sprout, then gently dried and processed into flakes. This makes the grain taste milder and slightly sweet, and the flakes become tender. TAIGA Naturkost processes oats, spelt, barley, and buckwheat in this way and specifies that their fruit muesli is processed at under 42 degrees Celsius.

Muesli and cereals are often mentioned in the same breath. Cereals is the collective term for breakfast products made from grain, ranging from cornflakes and pops to flakes. Muesli leaves the grain visible: you see flakes, seeds, and pieces of fruit, and you can expand the mixture according to your taste.

Gluten-free and vegan

Oats are only considered gluten-free if they are specifically grown, processed, and labeled as such, because they can easily come into contact with wheat, spelt, or barley in the field or at the mill. Botanically, buckwheat is not a cereal but a knotweed plant and is naturally gluten-free. All three TAIGA mueslis are labeled as vegan; only Nastja’s Muesli is gluten-free, while the other two contain spelt or barley.

Three mueslis from TAIGA, coconut from Solling

TAIGA Naturkost from the Palatinate region processes raw materials from organic farming and wild harvesting, including Siberian cedar nuts from the Altai mountains. Our bestseller is Maschas Kascha, a base mixture of spelt, barley, and oat flakes, buckwheat, and cracked flaxseed, all sprouted and from organic farming in Europe. Fruit and nuts are deliberately absent: the mixture is the base that you add to yourself.

Also very popular is Nastja’s Muesli, gluten-free with sprouted oat flakes and buckwheat, mulberries, cranberries sweetened with apple syrup, and cedar flakes. The cedar flakes are partially de-oiled cedar nuts from the Altai; the cranberries provide a subtle acidity. It tastes sweet, tart, and nutty all at once. Ivan’s Muesli combines sprouted oats and barley with 20% dried mulberries, apricot pieces, and 15% tiger nut flakes. Despite its name, the tiger nut is the tuber of a sedge grass and adds a mild, nutty sweetness; the remaining sweetness comes solely from the fruit.

The Ölmühle Solling provides organic shredded coconut: made from harvest-fresh coconuts, gently dried at about 80 °C, unsulphured, unbleached, and unsweetened, in a light-protected 300g bag. They have a sweet, nutty taste; toasted briefly in a dry pan, they smell even stronger and add crunch to the muesli.

Mixing, soaking, and cooking

For a quick bowl, stir the muesli into cold plant-based drink or milk and let it swell for a few minutes. If you prefer it softer, prepare it the evening before with yogurt or juice and place it in the fridge overnight – this creates overnight oats. On cold mornings, cook it as porridge: bring the muesli to a boil with twice the amount of liquid, let it simmer for a few minutes, and top with fruit and a spoonful of honey or nut butter. You can supplement the Maschas Kascha base mixture however you like: grated apple as in Bircher-Benner's recipe, berries, banana, chopped nuts, or toasted shredded coconut. You can also use shredded coconut for macaroons, cakes, energy balls, or curry.

Buying and storing muesli

  • Base mixture or ready-made: With Maschas Kascha, you decide what goes in; Nastja’s and Ivan’s Muesli come pre-mixed.
  • Gluten-free: Look for the explicit label, as seen with Nastja’s Muesli.
  • Read the ingredients: The percentages show you how much fruit or nut is in the mixture.
  • Storage: Keep muesli and shredded coconut in a dry, dark, and tightly sealed place, ideally in a tin or a glass jar with a lid.
  • Shredded coconut: Due to its fat content, consume promptly after opening and protect from heat.

What else belongs on the breakfast table

Muesli & Cereals belongs to the Breakfast & Spreads category. For sweetening and refining, you will find six organic varieties under Honey, from liquid acacia honey to forest honey. And in the sweet spreads section, there is the cedar nut butter from TAIGA, which you can stir into porridge or spread on bread.
