Lang Weinessig Organic Vinaigrette Liese. Organic vinaigrette with Riesling, mild and balanced – the 500 ml bottle for your pantry.
Lang Weinessig Organic Vinaigrette Liese is an organic vinaigrette from the Southern Palatinate: 63 percent white wine vinegar aged in oak barrels, 13 percent Riesling wine, plus organic sugar, sea salt, and grape must. 500 ml, mild and balanced. It contains no oil, no spice blends, and no herbs – a vinegar preparation that can be used pure over salad.
Liese by Lang Weinessig is a vinaigrette in the literal sense: a ready-seasoned vinegar preparation that you can add directly to salad, vegetables, or potatoes. You add the oil yourself. You choose the one you like best, or leave it out entirely. The 500 ml bottle is intended for anyone who needs it regularly. For frequent users, it won't end up in the pantry cupboard, but right next to the stove.
Mild in character, Riesling in the background
Liese tastes mild and balanced: a soft acidity, followed by the fruit of the Riesling, plus the sweetness of organic sugar and grape must. The white wine vinegar matures for more than a year in barrique barrels, which gives it a fine roundness.
The vinegar it contains is also referred to as "white balsamic from the Palatinate." The comparison hits the mark: light, fine, with a slight sweetness. However, it is much lighter than a dark balsamic and barely colors the salad.
Sugar and grape must are honestly listed in the ingredients; they round off the acidity. In a glass or on a spoon, Liese therefore tastes softer than you might be used to from a simple white wine vinegar. On the plate, you notice this especially with raw vegetables, where the sweetness cushions the acidity.
Anyone expecting a strong, spicy, or pungent vinaigrette will find Liese too restrained. It supports the dish rather than taking it over. That is precisely why it suits every season and both hearty and delicate leaves.
A splash for salad, quark, and potatoes
Liese refines every salad: green salad in the spring, cucumbers in the summer, lamb's lettuce and grated carrots in the winter. Start with one tablespoon per serving and taste before you add more.
Two ideas are particularly quick. A few splashes in quark make for a ten-minute dinner with warm boiled potatoes. And in potato salad, Liese provides the acidity that otherwise comes from a combination of vinegar and lemon.
Because the bottle is filled without oil, you decide the rest yourself. Those who want a classic dressing stir Liese with rapeseed oil, olive oil, or walnut oil. Those who like it light can drizzle it pure over leaf lettuce or cucumbers.
In terms of volume, this allows for plenty of flexibility: 500 ml equals a good 30 tablespoons. If you prepare a salad for two daily, it will last for several weeks, and if you only have guests on the weekend, significantly longer. After opening, keep the bottle tightly sealed, preferably in a cool, dark place.
It is also useful outside the salad bowl: a dash over steamed vegetables just before serving, a splash over fried fish or light meat, or a spoonful in a dip for vegetable sticks. In all these cases, the mild acidity adds freshness without masking the flavor.
Our tip: Add the vinaigrette to the bowl first, then the salt, and only then the oil. This allows the salt to dissolve in the acidity, and the dressing emulsifies more evenly.
For the pantry bottle, a dosing aid is worthwhile: a pourer or a small carafe for the table makes measuring easier. The large bottle then stays in the kitchen and is only opened for refills.
Riesling and oak barrels from the Southern Palatinate
Lang Weinessig is a manufactory in Gommersheim in the Southern Palatinate. It was founded by the trained chef Jens Michael Lang, who learned and worked in star-rated kitchens. For over ten years, he has been producing wine vinegars, vinaigrettes, fruit balsams, and ready-made salad dressings.
The basis for many products are wines from an organically certified winery in the Southern Palatinate. With Liese, two of these come together: the white wine vinegar, which according to Lang Weinessig matures for more than a year in barrique barrels, and a Riesling that has been reduced and is therefore non-alcoholic. The ingredients are from controlled organic cultivation; the organic control number is DE-ÖKO-006.
Lang Weinessig calls the Palatinate the Tuscany of the North: the sun shines here more than in many other German regions, and even figs grow here, but above all, wine. Liese is the vinaigrette in which this Riesling character comes through most clearly.
As a chef, Jens Lang knows what matters: natural ingredients, versatile products with a light acidity and flavor. These three points characterize all varieties from the manufactory, and with Liese, the ingredient list is particularly short: vinegar, wine, sugar, salt, must. A mild vinaigrette hardly needs more ingredients, and that is precisely what makes it so versatile in the kitchen.
The large bottle for those who make salad every day
The 500 ml bottle is for households where salad is part of everyday life: families, office lunches, or avid cooks with guests on the weekend. If you live as a couple or just want to try it out, pick up the Organic Vinaigrette Liese in the 180 ml bottle. It is smaller, fits into any gift bag, and is enough for a test run of several weeks. The content is the same, only the quantity differs.
As a counterpart to Liese, the bolder Vinaigrette Doro with dried tomatoes is also available in 500 ml. Liese for leaf salad and potatoes, Doro for tomatoes, mozzarella, and sauces: this covers two basic varieties for everyday use. If you would rather give Liese as a gift, you can also find it in the Vinaigrette Gift Set along with three other 180 ml varieties. You can find all varieties on the Lang Weinessig page.
Liese is not suitable for those looking for a spicy, herb-forward, or fruity-dark dressing. There are other varieties from the same manufactory for that.
