Lang Wine Vinegar Sauce Pinot Noir & Cherry. Vinegar-based sauce with cherry – fruity, fresh, 175 ml.
Lang Wine Vinegar Sauce Pinot Noir & Cherry is a slightly creamy vinegar-based sauce from Gommersheim in the Southern Palatinate. It is made from Pinot Noir, white wine vinegar, sour cherry juice, and cherries, along with onions, mustard, and sea salt. Fruity and fresh, sweetened with grape must and fruit, with no added refined sugar. 175 ml for use as a dressing and dip.
Sauce Pinot Noir & Cherry by Lang Wine Vinegar is a fruity dressing and a delicate dip with mustard and cherry. A "Tunke" (sauce) is a vinegar-based preparation that is thicker than a vinaigrette, making it suitable for dipping. The manufacturer describes this variety as wonderfully fresh and slightly creamy, bringing summery freshness to the table.
Cherry and Pinot Noir, with a hint of mustard
The sauce tastes fruity and fresh, with notes of sour cherry and an acidity that never becomes heavy. Mustard provides seasoning in the background.
The Pinot Noir gives the sauce a soft red wine note, while the cherries provide the fruitiness. In total, the bottle contains 12 percent cherries and 16 percent sour cherry juice, along with 20 percent Pinot Noir and 20 percent white wine vinegar. The consistency is slightly creamy.
The cherry sets this variety apart from the other three: it is the only one with cherry and is flavor-wise between the light apricot and the dark date. Anyone who likes cherry jam with cheese or lingonberries with game will recognize the profile, only fresher and zestier due to the vinegar and mustard.
For bread, soft cheese, and game pâté
The sauce goes best with things that can handle a bit of fruit: crusty bread, soft cheese, pâtés, and salads with robust greens.
The manufacturer suggests toasted bread and soft cheese as ideal partners, as well as raw vegetables, cold and hot meats, and game pâtés. Serve it alongside Camembert or fresh goat cheese on a cheese platter. A spoonful of sauce adds a fruity accent to a pâté or farmhouse bread with ham.
As a dressing, whisk one tablespoon of the sauce with one tablespoon of oil and a splash of water. This goes well with lamb's lettuce with nuts, arugula with goat cheese, or a salad with duck.
The sauce can also be used for the grilling season. Brush it onto pork tenderloin, chicken breast, or bratwurst at the end of the cooking time, and the cherry fruit will remain as a glossy glaze. It is also a winner with cold roast leftovers or roast beef on bread. Raw vegetables like carrots, kohlrabi, and celery taste like a small appetizer plate when served with it.
Our tip: Toast a slice of baguette, spread with cream cheese, and top with a spoonful of the sauce. It's a quick snack for guests.
Wines from the Southern Palatinate and a chef as founder
The basis for the sauce is wine from a certified organic winery in the Southern Palatinate. Lang Wine Vinegar is based in Gommersheim.
The company was founded by trained chef Jens Michael Lang, who learned his trade in star-rated kitchens. He has been producing wine vinegars, vinaigrettes, fruit balsams, and ready-made salad dressings for over ten years. The cherry sauce is part of a series of four varieties, all of which use wine and fruit.
The manufacturer highlights the use of natural ingredients in their sauces. For this variety, that means a short list of ingredients: grape must, Pinot Noir, white wine vinegar, sour cherry juice, cherries, onions, mustard, sea salt.
For tasting, gifting, and small households
The 175 ml bottle is just right if you want to test the variety at your leisure, live alone or as a couple, or are looking for a small gift.
The bottle makes a great gift for people who enjoy putting cheese, bread, and wine on the table. A farmhouse loaf, a piece of soft cheese, and the sauce make a tasty gift. In a small household, the bottle provides many portions of dip and dressing.
If you would like to get to know all the varieties in the series, you will find four 175 ml sauces in the sauce gift set, including this one. The Sauce Dornfelder & Date is slightly spicier and darker, while the Sauce Pinot Blanc & Apricot is lighter and milder. You can find all the manufacturer's products on the Lang Wine Vinegar page.
The sauce is not suitable for those with a mustard allergy, as mustard is one of the ingredients. And if you are looking for a sauce without a fruity note, you are better off choosing a vinaigrette from Lang.
