Kohl Mountain Apple Juice Rouge. Single-varietal apple juice from a red-fleshed variety – cherry red, acidic, and bold.

Kohl Mountain Apple Juice Rouge is a naturally cloudy, single-varietal straight juice from the red-fleshed Rouge apple variety, pressed at the Troidner fruit farm in Unterinn on the Ritten in South Tyrol. The 750 ml bottle contains 100% apple juice, with no added sugar, preservatives, or additives.

Rouge Mountain Apple Juice from Kohl usually sparks a question at the table. When pouring apple juice, people expect a golden glass. Here, it glows cherry red, and guests often want to know if it contains wine. The answer is simple: the color comes from the apple itself. Rouge is a red-fleshed variety where, according to Thomas Kohl, even the blossoms, leaves, and bark are red. Single-varietal means that only apples from this one variety go into the press, without blending with other types. Kohl calls his juices "mountain apple juice" because the trees grow at an altitude of nearly 1,000 meters on the Ritten above Bolzano. Straight juice means: the apples are pressed, and the fresh juice is made shelf-stable through gentle pasteurization and bottled. There is no detour via concentrate. It remains naturally cloudy because only the coarse sediments settle after pressing. Kohl calls this a natural filtration process. In the product range, the Rouge belongs to the GOURMET line, where each bottle is dedicated to a single apple variety.

Taste

The Rouge tastes bold and highly acidic, with a freshness that lingers into the finish. The color alone shows that this juice is built differently than a classic apple juice from yellow varieties. In the glass, it presents a clear cherry red, naturally cloudy and dense.

On the nose, according to the manufacturer, it is reminiscent of red currant, cherry, and rhubarb. These are notes you are more likely to associate with berry juices than an apple. On the palate, it has a slightly astringent effect. This is the fine, puckering sensation you know from rhubarb or black tea. Added to this is a distinct acidity that carries the entire sip and keeps the palate alert.

The sweetness fades into the background. That is precisely why the Rouge feels more like an accompaniment to food than a thirst quencher. Anyone expecting a soft, round apple juice will find it too tart. For everyone else, this edge is exactly the appeal: a juice with bite that holds its own in the glass and can stand up to bold flavors. It is best enjoyed slowly, sip by sip, like a young red wine.

Usage

Serve the Rouge well-chilled at 8 to 10 °C, preferably in a stemmed glass. This allows the aroma to unfold like a wine, and the red color truly stands out. Thomas Kohl recommends it as an aperitif, with fish and meat antipasti, and with Asian dishes.

As an aperitif, it replaces a glass of sparkling wine or Campari for those abstaining from alcohol. Its acidity stimulates the appetite instead of filling you up. It pairs well with antipasti because it cuts through fat and salt. Think of thinly sliced bresaola with arugula, vitello tonnato, marinated salmon, or a platter of speck and pickled vegetables. The cherry and currant notes of the juice pick up the savory elements and make the next bite taste fresh.

With Asian dishes, it plays a different role. With spicy curries, glass noodle salad with lime and cilantro, or sushi with ginger, it brings fruitiness to balance the heat and acidity to counteract the oil. It also works well with a plate of dim sum or stir-fried noodles with vegetables. Once opened, keep the bottle in the refrigerator and consume it within six days, according to the manufacturer. Store unopened bottles in a cool, dark place.

Our tip: Serve the Rouge at the end of the day with a few slices of bresaola, some parmesan, and grissini. In a stemmed glass and served at 8 to 10 °C, you get an aperitif that brings both color and acidity to the table.

Origin

Behind the Rouge is Thomas Kohl, whose family has lived on the Ritten for generations. After his training, he wanted to understand how apples thrive at nearly 1,000 meters above sea level. Before returning to the farm, he traveled half the world, as he puts it. Together with his father, he planted apple trees, converted the Troidner fruit farm in Unterinn to fruit growing, and began pressing single-varietal juices.

His guiding philosophy is: treat apples as well as wine. He makes this comparison deliberately, as many things are similar between grapes and apples. Location, variety, and ripeness define the result, and each variety gets its own bottle. With the Rouge, you see and taste this particularly clearly, as it is so distinct from the yellow varieties.

The apple orchards face east to southwest and are, according to Kohl, extremely sunny. In the evening, the mountain breeze cools the slopes, creating large temperature differences between day and night. The apples therefore grow slowly. Harvesting takes place between August and October, with two to three passes per tree. The fruits are picked individually by hand, only when fully ripe, and are taken to the on-site press. Within a few hours of harvesting, they are inspected, washed, milled, and pressed.

For whom

The Kohl Mountain Apple Juice Rouge is for everyone who wants a glass with character to accompany their meal while avoiding alcohol. It is perfect for an antipasti evening with friends and for Asian cuisine on the weekend. And it belongs on every table where guests who are not drinking wine should still receive a glass that pairs well with the food. As a gift, its color makes it stand out and provides a conversation starter. According to the manufacturer, the juice contains none of the 14 major allergens and carries the vegan seal from the European Vegetarian Union. The Mountain Apple Juice Jonagold is softer, sweeter, and has a scent of pear. The Mountain Apple Juice Sonnenglanz is fresh and citrus-forward. All varieties and cuvées can be found on our page for Kohl Mountain Apple Juice. The Rouge is not suitable as a mild juice for children or for breakfast, as it is too acidic for that.

A red-fleshed apple variety, 750 ml of single-varietal mountain apple juice from the Ritten – cherry red in the glass and with enough acidity for antipasti and curry.
