Victor Vanille by Generous used to be a sailor. As the story goes at Generous: In Madagascar, Victor fell in love with "Mahavanille," and ever since then, everything for him has revolved around vanilla. The story fits a cookie that focuses entirely on this one ingredient. It is supported by a flour that surprises many: buckwheat. Despite its name, buckwheat is not a grain and is not related to wheat. It belongs to the knotweed family, like rhubarb and sorrel, and naturally contains no gluten. Its triangular grains resemble beech nuts, hence the name. Generous blends buckwheat with potato starch and tapioca. A little xanthan gum, a plant-based thickener, replaces the binding that gluten would otherwise provide. The ingredients are organic, certified by Certisys (BE-BIO-01), and the cookie is gluten-free with less than 20 mg of gluten per kilogram.
Taste
Victor Vanille tastes buttery, mild, and of vanilla. The manufacturer describes the cookies as melt-in-the-mouth. This fits a sablé, a shortbread with plenty of butter that crumbles finely on the tongue.
The recipe calls for real organic vanilla instead of vanilla flavoring. It makes up 0.13% of the dough—a small amount on paper, but distinct in taste. Cane sugar provides a mild, slightly caramel-like sweetness. A pinch of salt brings out the butter and vanilla.
The buckwheat adds a fine, slightly nutty depth. It makes the cookie slightly heartier than a butter cookie made from wheat flour. Those expecting a cookie with chocolate or fruit will find a simple variety here that thrives on just a few ingredients. For lovers of classic butter cookies, that is precisely the appeal.
Use
Victor Vanille is the most versatile cookie in the family. It goes equally well with coffee, tea, and a glass of milk. For children, it is a mild afternoon treat; for adults, a companion to a cappuccino.
In dessert preparation, it is a great partner for fruit. Serve it alongside apple compote, rhubarb, or fresh strawberries. Crumbled, it becomes a base for cheesecake in a glass: mix crumbs with a little melted butter, press into glasses, and top with cream cheese frosting and berries. It also tastes great with panna cotta or rice pudding. For a children's birthday party with gluten-free guests, these cookies are a simple solution. On a Christmas cookie platter, it is best to place them in their own bowl so they remain separate from the wheat-based pastries.
Allergen information: The cookies contain milk (butter). They may contain traces of hazelnuts, almonds, and eggs.
Our tip: Serve Victor Vanille with warm rhubarb compote. The buttery vanilla beautifully balances the acidity of the rhubarb.
Origin
Generous started in Brussels. According to a 2015 report, the first workshop was located in Anderlecht, by a canal, and was closed to visitors. Starting in January 2013, the "Generous family" included five varieties. Since 2013, the biscuit factory has been baking organic, gluten-free cookies, by their own account.
Today, they are baked in Tubize, in their own workshop in Walloon Brabant south of Brussels. Generous describes itself as a family-run, artisanal biscuit factory. Victor Vanille is one of the varieties in the 100g pack, alongside Charlotte Chocolat, Céline Citron, and Nicole Noisette. Each variety has its own character, as intended by the brand's concept.
For whom
The vanilla cookies are for anyone who enjoys a mild, buttery cookie and wants or needs to eat gluten-free. They fit into the family cookie jar, the lunchbox, and on the coffee table with guests. Also a buttery sablé, but with lemon, are the Céline Citron lemon cookies. For breakfast, there are the Martin Matin oat cookies. You can find all varieties on our Generous page. They are not suitable for those with a milk allergy, as butter is one of the main ingredients.
