José Gourmet Tuna Mousse. Portuguese fish pâté made from tuna, tomato, and red pepper – mild, creamy, versatile.
José Gourmet Tuna Mousse is a spreadable fish pâté from Portugal: 55 percent tuna from the Atlantic and Pacific, plus red pepper, olive oil, tomato, and vinegar, in a 75g tin. Not a tuna salad, not a mayonnaise cream – a smooth pâté that works both on its own and in the kitchen.
Tuna Mousse by José Gourmet is the pâté for anyone familiar with canned tuna but who has never tried it as a cream. In Portugal, pâté is a staple appetizer: finely blended fish with oil and seasoning, served with bread and olives. All José Gourmet pâtés share a base of olive oil, tomato, and vinegar. For the tuna version, red pepper is added. The result is a light, soft cream that spreads almost by itself on warm toast. The manufacturer suggests enjoying the pâté on its own or pairing it with many other dishes. That is exactly what makes it a pantry essential.
Flavor
The tuna mousse tastes mild and balanced, with the familiar flavor of cooked tuna. The texture is creamy and dense, and it spreads easily even when taken straight from the refrigerator. Tomato and olive oil provide richness, while the vinegar keeps the cream fresh. The red pepper adds a subtle warmth that only emerges in the finish.
Within the José Gourmet pâté range, this is a great entry-level variety. The Spicy Mackerel Mousse is bolder and sharper. If you are looking for the bite of firm fish flesh, you will be less satisfied with this cream and should opt for the Tuna Fillet in Olive Oil instead.
Usage
On its own, the mousse belongs on toasted bread, preferably with a few capers, black pepper, and a squeeze of lemon. For an aperitif, spread it on crackers or thin slices of baguette and top with a halved cherry tomato. The small tin takes up hardly any room in a picnic basket.
The pâté really shows its strengths in the kitchen. Luís Baena, who creates the recipes for José Gourmet, stirs it into a Russian salad made of potatoes, peas, and carrots. A second recipe combines it with basmati rice, almonds, and a curry mayonnaise to create a rice salad. Both are perfect for lunch the next day.
Even simple ideas work well: stir the mousse into hard-boiled egg yolks and fill the egg white halves with the mixture. Or add a spoonful to a quick vinaigrette, which then resembles a tuna sauce – great with cold roasts or grilled vegetables.
Our tip: Mix the mousse with a little yogurt and a splash of lemon to make a dip. Serve with bell pepper and cucumber sticks, and you have an appetizer for four ready in five minutes.
Origin
According to the manufacturer, the tuna for this pâté comes from the Atlantic and Pacific oceans. José Gourmet is a Portuguese brand belonging to the company 100MISTERIOS, Lda., which selects artisanal products. The name honors all Josés; its Hebrew root means "he who adds." The brand aims to add value, both in production and in enjoyment.
That includes visual appeal. Every tin features the work of a Portuguese illustrator; the Tuna Mousse was designed by Mónica Correia. Together, the images form a growing family that now includes around 55 names on the manufacturer's website. The recycled packaging is meant to be kept as a collector's item, long after the pâté has been eaten.
