Wajos Kalahari Desert Salt. Pure rock salt from the Kalahari, coarse and mild – the salt for the mill, which lets spices and herbs take center stage.
Wajos Kalahari Desert Salt is a natural rock salt from the Kalahari Desert with only one ingredient: salt. 140 g from Wajos in Dohr on the Moselle. Not sea salt with iodine, not spiced salt, and not fine table salt, but coarse crystals for the mill – mild, slightly sweet, and with little intrinsic flavor. Vegan.
Kalahari Desert Salt from Wajos is the antithesis of everything on the table that demands attention. Fleur de sel crunches, smoked salt has a scent, and herb salt wants the starring role. The salt from the Kalahari holds back: it seasons in a round and mild way, free from the bitterness that some sea salts bring. That is exactly why it sits in our mill next to the stove – for boiling water, for the steak before searing, for the tomatoes in the bowl. A salt that remains in the background and ensures that everything else tastes better.
Mild, slightly sweet, free from bitterness – a salt that keeps to itself
The crystals are coarse, light, and dry; they pour from the mill instead of clumping. On the tongue, the salt is softer than sea salt: instead of a sharp peak and a bitter aftertaste, it offers a round, slightly sweet saltiness that quickly fades. This very lack of distinct flavor is its strength – it stays in the background in a spice blend, in steak pepper, or on herb butter. To be honest, that’s all there is to it: it is salt, nothing more. Anyone expecting minerals, iodine, or any special effect will look in vain, and a pinch remains a pinch. This desert salt is not suitable for those who want crunchy salt flakes to sprinkle over steak or chocolate – in that case, Fiore di Sale is the right tin.
From the mill over everything that needs seasoning
This salt belongs in the mill, and the mill belongs next to the stove. Potatoes, pasta water, oven-roasted vegetables, the steak before the pan, the Sunday roast – wherever salt should season while remaining in the background. Coarsely ground over tomatoes with olive oil, finely ground into dough for bread and pizza. When mixed in the mill with dried herbs, garlic, or pepper, it becomes a custom spiced salt where the herbs remain audible. It is dosed like any other salt; mild still means full seasoning power here. It is not suitable for sprinkling directly before serving if you are looking for a bite – the coarse crystals dissolve slowly and crunch between the teeth, far removed from the delicacy of a flake.
Our tip: Kalahari salt and Tellicherry pepper in two mills side by side – the basic equipment with which we start every steak and every oven-roasted vegetable dish.
A salt from the desert, packaged by a factory on the Moselle
The salt comes from the Kalahari and is packed by Wajos in Dohr near Cochem on the Moselle. The family business with over 80 employees bears the initials of Walter Josef Oster. He founded a winemaking family in Ediger-Eller, which has been producing wine for 15 generations. Peter Oster and Ulf Schwichtenberg built the Wajos brand from this, with around 900 items, stores throughout Germany, and an in-house laboratory that tests the products – salts and peppers complement the spice blends produced in-house.
The salt for the mill at the stove and for people who mix their own spices
The desert salt is the tin for anyone who wants an everyday salt with more character than table salt. Yet it is barely meant to be noticed. 140 grams will fill a mill several times over; when stored dry, salt lasts practically indefinitely. As a gift, it is perfect for people who have just furnished a kitchen, especially when paired with steak pepper; all salts and spices can be found on our Wajos page. It is not suitable for anyone expecting a distinct flavor from their salt – smoke, herbs, crunch – or for those who use their salt only by sprinkling and never by grinding.
