HolunderBlütenWunder Elderflower & Ginger Premium Syrup. Syrup made from elderflowers, lemon, and ginger – floral, spicy, and perfect for hot or cold drinks.
HolunderBlütenWunder Elderflower & Ginger Premium Syrup is an elderflower syrup with ginger extract and lemon juice in a 250 ml bottle. It comes from the "blossom kitchen" of HolunderBlütenWunder in Tübingen. Mixed at a ratio of 1:4 with hot water or cold sparkling water, it creates a drink with a spicy kick.
Elderflower & Ginger by HolunderBlütenWunder is the spicy variety in the small Tübingen-based product range. Outside it is grey and cold, inside a cup steams with the scent of lemon, blossoms, and fresh ginger. The family created this syrup for just such moments. The base is the same as the classic elderflower syrup: water, beet sugar, lemon juice, and elderflowers, along with citric acid and a little vinegar. Ginger extract is added to the mix. An extract is a concentrated essence of the root that carries its heat and fragrance in liquid form. This allows the ginger to distribute evenly throughout the syrup, completely free of fibers or pieces. Like all HolunderBlütenWunder syrups, this is a concentrate. It only becomes a drink when diluted with water. The manufacturer recommends a ratio of about 1:4. A 250 ml bottle therefore makes about a liter of hot drink or spritzer.
Taste
Two opposites meet in this bottle. The elderflower is delicate, floral, and fragrant. The ginger is hot, warm, and spicy. In the glass, they combine into a flavor that begins with floral notes and leaves a pleasant warmth in the throat.
Lemon holds both together. It provides acidity and freshness, preventing the sweetness of the beet sugar from becoming too dominant. In the finish, the heat of the ginger remains noticeable for a while, while the floral scent slowly fades.
The intensity of the ginger depends on the temperature. When brewed hot, it stands out clearly, as the heat amplifies its spiciness. Mixed cold with sparkling water, it becomes fresher and zippier. In our interview, Malena Medam of HolunderBlütenWunder speaks of a "special refreshing kick." Those who prefer a mild, purely floral taste will find the ginger heat too strong. For that palate, the classic elderflower syrup is the better choice.
Usage
In our interview, Malena Medam calls this variety "ideal for hot drinks." Add two to three tablespoons of syrup to a large mug and top with hot, but not boiling, water. A slice of lemon or orange and a cinnamon stick turn it into a winter tea. If you like it even spicier, add a few fresh slices of ginger. For a children's punch for an Advent afternoon, heat apple juice and water in equal parts with cloves and star anise. A splash of syrup per mug adds blossom flavor and warmth.
In summer, the syrup works well as a spritzer. With cold sparkling water, ice, and a sprig of mint, it is a thirst quencher with bite. For a homemade ginger lemonade, mix syrup, sparkling water, and the juice of half a lime in a carafe. Iced tea made from green or black tea also becomes more exciting with a splash of it.
In cocktails, this variety brings a spice that pairs well with many spirits. With vodka, lime, and ginger beer, it creates a floral take on the Moscow Mule. With gin, tonic, and a slice of cucumber, it becomes a fresh long drink. The syrup also works in sparkling wine with mint and lime as a spicy Hugo.
In the kitchen, elderflower and ginger pair well with Asian-inspired dishes. A dressing made from syrup, soy sauce, lime juice, and sesame oil tastes great on cucumber salad, glass noodle salad, or salmon. A spoonful of syrup adds a spicy note to fruit salad with mango and pineapple. Keep the bottle in the refrigerator once opened; according to the manufacturer, it will last at least six weeks.
Our tip: Stir a tablespoon into a cup of hot milk or oat drink and sprinkle some cinnamon on top. This turns the syrup into a spicy drink for cold evenings.
Origin
The family behind the syrup is based in Tübingen. Malena Medam is the daughter of founder Roberto Deimel. She picked elderflowers as a child and teenager and took over production management at the age of 20. Later, she trained as a cultural manager and worked for the Berlin Clubcommission. Through this path, she introduced HolunderBlütenWunder to the Berlin gastronomy scene. Today, she is responsible for strategic management and sales.
The family deliberately keeps the range small. According to Malena Medam, only four types of syrup and one "Elderflower Pearl" have been developed over four decades. Elderflower & Ginger is the variety that carries the syrup into the winter. For the blossoms, the family heads out every year in early summer; everything is picked by hand. The blossoms and beet sugar come from Baden-Württemberg, the lemons from Italy.
After bottling, the "blossom kitchen" gently heats the syrup, allowing it to remain fresh for more than three years unopened, according to the manufacturer. The ingredient list does not contain any of the 14 main allergens.
For whom
Elderflower & Ginger is for everyone who likes to drink something hot and caffeine-free in winter. It suits people who like ginger tea but are looking for a rounded, floral note to go with it. In summer, it is for everyone who prefers their spritzer with a bit of spice rather than just sweetness. Hobby mixologists will also find it a spicy ingredient for long drinks. The bottle also makes a great small gift in autumn, perhaps paired with a nice mug and a lemon. And for those looking for an alternative to their fifth cup of coffee at the office, keeping a bottle next to the kettle is a great idea.
