Die Honigwanderer Acacia Honey. Organic honey from German migratory beekeeping – mild, light, and liquid for months.
Die Honigwanderer Acacia Honey is a mild organic honey from selected nectar-rich regions in Germany, obtained through migratory beekeeping. It is gently extracted, strained, and bottled unheated in a 250g jar, certified according to EU organic standards.
Acacia honey from Die Honigwanderer bears a name that is, strictly speaking, inaccurate. The bees actually collect it from the black locust tree, commonly known as the acacia or false acacia. Originally from North America, the tree now grows in Germany along forest edges, railway embankments, and on sandy soil. In late spring, it is covered in white, fragrant flower clusters, and that is exactly when the bees need to be on-site. The bloom lasts only a few weeks. That is why this variety is so well-suited to migratory beekeeping: the colonies travel to wherever the black locusts are currently in bloom. The result is a light, particularly mild varietal honey. Varietal honey means the nectar comes predominantly from a single plant species.
Taste
The honey from the black locust tastes mild, soft, and slightly floral. Its sweetness is restrained; you won't find any bold spiciness here. This is also how the producer describes it.
In the jar, it is light and clear. Its special feature is its consistency. It has a high fructose content, which, according to the producer, is why it remains liquid for months. It pours from the spoon like a thread and spreads easily.
It is precisely this restraint that makes it popular. It tastes like honey, but it does not dominate. Anyone expecting a strong, spicy honey with character will find it too mild. For those who primarily appreciate honey as a refined sweetness, it is just right.
Usage
According to the manufacturer, acacia honey is suitable for sweetening tea, yogurt, or muesli without masking other flavors. It is perfect for exactly that: a spoonful in green tea or herbal tea sweetens without changing the taste. To preserve its delicate aroma, let hot drinks cool down a little first.
On the breakfast table, it goes well with buttered bread, rolls, or pancakes. Because it remains liquid, it is easy to drizzle over yogurt, quark, or porridge. In the kitchen, it is a good honey for salad dressings with mustard and vinegar, for marinades, or for glazing carrots. It is also suitable for baking when the honey should not be the dominant flavor. The manufacturer explicitly states it is suitable for children, so it is a great addition to the family breakfast table.
Store the jar in a cool, dry place away from sunlight. If the honey does become firm after a long time, liquefy it in a warm water bath at a maximum of 40 °C.
Note: The only ingredient is organic honey; it contains no major allergens that require labeling. Honey is generally not suitable for babies under twelve months old.
Our tip: Whisk a teaspoon of honey with lemon juice, olive oil, and a little mustard to make a dressing. The mild sweetness ties everything together without standing out.
Origin
Die Honigwanderer was born from the idea of combining organic beekeeping with migratory beekeeping. The beehives are located in selected, near-natural foraging areas in Germany, far from intensive agriculture. The partner apiaries work according to EU organic standard guidelines, with a focus on the well-being of the bees.
Today, the brand is part of Imkerei Goldnote, a family business owned by Simon and Stefanie Weber from Röhrnbach in the Bavarian Forest. The apiary took over Die Honigwanderer and continues to operate it as their organic line. They state that they are continuing the work of the original founders in their spirit.
For whom
This honey is for anyone looking for a mild, liquid honey for every day. It goes well with family breakfast, in tea in the evening, and in the kitchen. A stronger and spicier option is the forest honey, which is also liquid for a long time. A light, floral honey from the first blooms of the year is the spring honey. You can find all varieties on our Die Honigwanderer page. It is less suitable if you are looking for a honey that sets the tone in the dish itself.
