Kohl: Mountain Apple Juice from Ritten

Ritten is a high plateau above Bolzano. There, in Unterinn, lies Thomas Kohl’s Troidner fruit farm. His apple orchards reach up to an altitude of nearly 1,000 meters; the sites are sunny, and cooled by mountain winds in the evening. Harvesting is done by hand between August and October, in two to three passes per tree, and pressing takes place on the farm. Kohl's guiding principle: treat apples as well as wine. That is why, just like a winemaker with grape varieties, he lists the apple variety on the label.

Single-varietal juices of the GOURMET line

In the GOURMET line, every bottle contains only one apple variety, as a naturally cloudy direct juice. The Mountain Apple Juice Rouge comes from a red-fleshed variety and is a cherry-red, acidic apple juice perfect for antipasti. The Mountain Apple Juice Jonagold is mild, sweet, and smells of ripe pear. In addition, there is Pinova with notes of peach, Sonnenglanz with citrus freshness, and the full-bodied Rubinette with hints of date and quince. Kohl recommends serving all juices at 8 to 10 °C in a stemmed glass as an accompaniment to food. In the CUVÉE line, Kohl combines his mountain apple juice with other ingredients. The Apple Juice with Apricot contains 20% apricot pulp, while the Apple Juice with Pear contains 25% pear pulp. Lighter and more summery are the drinks with extracts of apple mint and elderflower. According to the manufacturer, no added sugar, preservatives, or other additives go into any bottle. The juices carry the V-Label of the European Vegetarian Union.
