Ingredients for tortellini salad
- Tortellini are available with various fillings. The spinach-ricotta filling is a classic and harmonizes particularly well with basil and green pesto.
- Italians make mozzarella from buffalo milk. The flavor is significantly stronger than the cow's milk mozzarella commonly found in stores here. A quick glance at the ingredient list will tell you everything you need to know.
- Cocktail tomatoes taste sweet and harmonize excellently with tortellini and pesto. Outside of the season, you can also use sun-dried tomatoes. Because of their savory flavor, you might be able to leave out the pesto.
- Spring onions have a savory and sharp flavor. You should wash them thoroughly before cutting, as they grow in sandy soil. Otherwise, they might crunch between your teeth later.
- Garlic releases its aroma best when you prepare it yourself. Chopping it helps retain the essential oils better, allowing the full aroma to get into your salad.
- You can find fresh basil in pots at the supermarket year-round. Basil herbs in plastic packaging can quickly develop germs and are not exactly environmentally friendly.
- High-quality olive oil refines your salad with an intense fruity note. White wine vinegar adds pleasant acidity and fine seasoning to the dressing.
Optional ingredients
- Meat add-in: You can supplement your tortellini salad with Italian air-dried ham, or fry up some bacon bits in a pan. It tastes delicious!
- Black olives add an intense, Mediterranean note. It is best to buy them pitted.

Shelf life
Tortellini salad with vinegar & oil dressing can be kept in the refrigerator for about three days. If prepared with homemade mayonnaise, the salad should be consumed no later than the next day. Store-bought mayonnaise contains no raw eggs and extends the shelf life by one day.
When serving, we recommend using clean salad utensils. This prevents the growth of germs and helps the pasta salad last longer.
Like other pasta dishes, tortellini salad does not freeze well. The pasta becomes mushy and the dressing components (oil and mayonnaise) separate due to the cold. We definitely recommend enjoying tortellini salad fresh!
