- Cook time: 10 min.
Ingredients
- 50 g wild garlic, fresh
- 250 g quark (or substitute plain Greek yogurt)
- 120 g plain yogurt
- 2 tbsp olive oil
- 1 pinch of salt
- Add fresh parsley according to preference
Instructions
- Wash the fresh wild garlic and parsley (if using) and ideally dry them in a salad spinner
- Coarsely chop the leaves (and parsley)
- Stir the herbs with the quark, yogurt, and olive oil until creamy
- Season the wild garlic dip with salt to taste
- Enjoy!
- You can also make the dip ahead of time and store it in the refrigerator in a screw-top jar for two to three days.
- It is better to cut or chop wild garlic by hand rather than using a blender or immersion blender. Mechanical chopping encourages the formation of bitter compounds.
