Tomato, olive oil, garlic, onions and chili, fruity with a hint of spice – the jarred pasta sauce for those evenings when you don't feel like chopping vegetables.

Wajos Sugo all' Arrabbiata is a pasta sauce made from tomatoes, olive oil, sugar, salt, onions, garlic and 0.1 percent chili, produced in Dohr on the Moselle. No tomato paste, no ketchup, no cream sauce – just a ready-to-use sugo with seven ingredients that only needs to be heated up. Vegan.

<!--nl--

Sugo all' Arrabbiata by Wajos has anger in its name – "arrabbiata" means "angry," because the chili in this Roman sauce has a bite. This sugo is the moderate version: it contains 0.1 percent chili, just enough for a warm finish, but not enough to scare a child away from the table. The rest is tomato, plenty of it, with olive oil, onion and garlic, like a sauce that has been simmering for an hour. To us, this is the difference between the jar you buy out of desperation and the one you deliberately keep in your pantry.

Tomato up front, followed by garlic and olive oil, with a warm chili finish

When opened, the sugo smells of cooked tomato and garlic. First comes the tomato, fruity and slightly sweet; although sugar is listed third, at 5.5 grams per 100 grams, it remains within the range of a standard tomato sauce. Then come the onion and garlic, cooked until soft, with the olive oil providing a rounded background. The heat arrives late and remains moderate. 63 kilocalories per 100 grams, 1.4 grams of salt – it's worth seasoning to taste. This sugo is not for those expecting an arrabbiata with real fire – for that, a teaspoon of Patatas Bravas Hot Dip added while heating helps.

Over penne, on pizza, with gnocchi, and as a base for more

Penne all'Arrabbiata is the classic: boil the pasta, heat the sugo in a pan, add the noodles with a splash of pasta water, toss briefly, and finish with Parmesan. One jar is enough for two to three portions. On pizza dough, it replaces tomato sauce; over gnocchi, it’s a ten-minute meal; sautéed with ground meat, it becomes a quick Bolognese. For shakshuka: heat the sugo, crack in eggs, cover, and let cook for ten minutes. If you want more substance, sauté some zucchini or bell peppers and pour the sugo over them – then the jar will stretch to feed four. Leftovers in the jar can become tomato soup the next day with a little broth. It is not suitable as a cold dip – olive oil and tomato need heat. And there is no need to cook it for long; it is already finished.

Our tip: Heart-shaped pasta with this sugo, topped with a few drops of Garlic infused Olive Oil – our go-to for Friday evenings when the fridge is empty and nobody managed to go shopping.

A sugo from Dohr, where a family business does most things itself

This sugo comes from Wajos in Dohr near Cochem on the Moselle, a family-run business with around 900 products, most of which are developed locally and tested in their own laboratory. The name stands for Walter Josef Oster, from a winemaking family in Ediger-Eller with 15 generations of viticulture history; his liqueur manufactory from the 1980s was expanded by Peter Oster and Ulf Schwichtenberg into the current brand with over 80 employees.

The pantry staple for evenings when shopping fell through

This sugo is the perfect jar for families who find themselves in a pinch once a week, and for anyone who wants pasta with a sauce that isn't from a packet.
