Medium-hot tomato ketchup, thick enough for a spoon, from a restaurant kitchen in Hesse.

Spiced Ketchup from Zum Heiligen Stein is a handmade ketchup from Lich near Giessen: 43 percent double-concentrated tomato paste, cane sugar, vinegar with raspberry juice, bell pepper, and spices, in a 400g jar. No thickeners, no flavor enhancers, no preservatives, vegan – in a jar because it is too thick for a squeeze bottle.

Spiced Ketchup is our best-selling ketchup by far, significantly outselling all other varieties and brands in our shop. The reason is simple: it is the variety that goes with everything. Medium-hot, fruity, with noticeably more tomato and spice than what comes out of a plastic bottle – and yet an all-rounder rather than a specialty product for a single dish. Bratwurst, fries, burgers, steak: a jar is a permanent fixture in the refrigerators of many of our customers, and the next order comes as soon as it’s empty.

Medium-hot means: spice you can taste, heat that warms instead of burns

The first impression is tomato: dark red, thick, sweet from cane sugar, with an acidity that remains well-rounded. This is ensured by the vinegar with raspberry juice, which the manufacturer uses instead of pure spirit vinegar: the acidity feels rounder, fruitier, and less sharp on the nose. Then come the bell peppers and the spice blend, which Boris Sauerborn keeps to himself, with a heat that lingers in the finish but never burns. Children usually eat this spiced ketchup without any issues; for those who want real heat, there is the Hot Ketchup with cayenne pepper.

The consistency is the second difference. Because there are about 400 grams of tomatoes in every kilo of ketchup, the fruit does the thickening: the ketchup is naturally thick, almost like a paste, and comes out of the jar with a spoon. Anyone opening it for the first time is often surprised at how little it pours – this is intentional.

One limitation must be mentioned: the sugar. With a good 36 grams of sugar per 100 grams, it falls within the range of a classic tomato ketchup, and the sweetness is part of the recipe. It is not suitable for those who need a sugar-reduced sauce. However, for anyone looking for a ketchup that tastes like tomato instead of syrup, this is the right choice. And one more limitation: those expecting a thin, pourable ketchup will find this jar to be too thick – it is made for spooning.

With bratwurst, on a burger, in a marinade

The classic is grilled bratwurst with a dollop of spiced ketchup on the side rather than on top. This way, the crust stays crispy, and you can portion it yourself. Just as good: fries and oven potatoes, pork chops and neck steaks, spare ribs, meatloaf, meatballs. On a burger, a tablespoon replaces the usual combination of ketchup and sauce because it brings both: sweetness, acidity, and spice.

For weekend breakfast, it goes with scrambled eggs and fried potatoes; for dinner, with fish fingers and mashed potatoes – dishes where a standard ketchup would only contribute sweetness, whereas this one adds spice as well.

In the kitchen, it is more than just a dip. Two tablespoons in gravy add tomato and depth. With a splash of oil, a little honey, and pepper, it becomes a marinade for chicken thighs or ribs that can be left to marinate overnight before hitting the grill. For a quick dinner: pasta with fried bacon and onions, finish by stirring in two spoonfuls of ketchup. And children who only eat potatoes with ketchup will prefer them with this one.

Our tip: Keep the jar in the fridge after opening and keep a long spoon next to it. For those who want the three classics—mild, spiced, and hot—together, get the Ketchup 3-piece set—five percent cheaper as a set.

From the Zum Heiligen Stein restaurant in Muschenheim

The ketchup was invented because there was no suitable sauce to be bought for the lamb bratwursts at the Zum Heiligen Stein restaurant. The restaurant is located in Muschenheim, a district of Lich near Giessen, and is owned by the Sauerborn family; the bratwursts came from their own sheep. In the restaurant kitchen, Boris Sauerborn cooked tomato paste, sugar, vinegar, and spices until the guests started asking for the recipe. The sauce for the lamb bratwurst became a product of its own, and the product became a gourmet manufactory that now produces five types of ketchup and supplies over 600 retailers. The spiced version is the original – the other varieties are variations of it.

The tomatoes come from Northern Italy as double-concentrated paste; Sauerborn visited the supplier there himself. This high proportion is the foundation for everything else: color, consistency, and flavor come from the fruit rather than additives. Mixing, filling, and labeling are done by hand in Muschenheim, in small batches. The jar with the lamb on the stone is the trademark – the lamb for the bratwursts that started it all, the stone for the "Heiliger Stein," the prehistoric stone monument on the edge of the village that gave the restaurant its name.

At the 2025 Great Taste Awards by the British Guild of Fine Food, the spiced ketchup received two stars, following a single star in 2021 – the jury praised the balance of acidity and sweetness and the "gentle warm kick" at the end. It is packaged in a jar with a metal lid instead of a plastic bottle – less out of principle than necessity: such a thick sauce could hardly be squeezed out of a bottle.

An everyday product you can give as a gift

Most customers buy the spiced ketchup for themselves, and they come back for more. Two or three jars at a time is common because, as experience shows, the first one is emptied quickly. It is the jar that belongs on every table for the grilling season; in winter, it stands next to fried potatoes and scrambled eggs.

Anyone ordering it for the first time should best add the hot version to compare: the base is the same, the difference lies solely in the heat. This way, you can figure out which one is "yours" during a barbecue evening – for most, it remains the spiced one, with the hot one as a second jar for guests who like it hotter.

It works as a gift precisely because of its unassuming nature: a jar of ketchup that surprises the recipient during their first barbecue. Together with the Truffle Ketchup, it makes a great small gift for people who usually think ketchup is just for kids.

A ketchup from Lich that goes with almost everything – and which has permanently replaced the bottle for many of our customers.
