Organic syrup essence made from Sicilian lemons that tastes like Bitter Lemon – for lemonade, long drinks, and aperitifs.

89Süd Organic Bitter Lemon Syrup Essence is an organic syrup essence made from organic lemons, organic lemon juice, water, and organic sugar by the 89Süd manufactory in Waldkirch, Bavarian Swabia. The lemons come from Sicily, from the foot of Mount Etna. More concentrated than classic syrup, with less sugar and plenty of fruit, vegan and non-alcoholic, 330 ml in a swing-top bottle. No quinine, no added flavorings, not a ready-made Bitter Lemon – an essence that you dilute yourself.

<!--nl--

Organic Bitter Lemon Syrup Essence from 89Süd is the manufactory's answer to a bottle found in many home bars: Bitter Lemon. The essence tastes exactly like it, but consists of four ingredients and is, as 89Süd calls it, pure nature. A syrup essence is a concentrate for diluting, but structured differently than a classic syrup. The focus is on the intense taste of the fruit; that is why, according to the manufacturer, the essence contains significantly less sugar and the highest possible concentration of lemon. The fruit used for this is the Syracuse lemon from Sicily, known for its particularly intense aroma. In a glass, mix one part essence with nine parts water. According to the manufacturer, a 330 ml bottle makes 3.3 liters of lemonade – from a single swing-top bottle that takes up hardly any space in the fridge.

Taste

The Bitter Lemon Syrup Essence tastes like Bitter Lemon: intense lemon, with a clear acidity, a fine bitter note, and a sweetness that holds both together. 89Süd describes the aroma of the Sicilian fruit as particularly intense, and that is exactly how it comes across in the glass.

In addition to the juice, whole organic lemons are listed on the label, and you can taste it: the essence has more of the fruit than a pure lemon lemonade, with zest, tartness, and depth. The bitterness is that of the lemon itself, fine and fruity, rather than the sharp bitterness that quinine brings to a classic Bitter Lemon. When diluted, it creates a lemonade that is tart and refreshing and leaves a taste of real lemon on the palate.

Anyone expecting a sweet lemon lemonade will get something else here: acidity and tartness are at the forefront, followed by sweetness. For children who like it sweet, the rhubarb is usually the better choice. Those who drink Bitter Lemon straight or like it in a long drink have come to the right place.

Usage

For the lemonade, add one part essence to nine parts sparkling mineral water, add plenty of ice, and it's ready. Pour the water into the glass first, then the essence, and stir briefly. If you like it stronger, add a splash more essence; if you prefer it milder, use a little more water.

89Süd recommends the essence for cocktails, long drinks, and aperitifs. In a long drink, it replaces the Bitter Lemon you would otherwise pour from a bottle. Mix the essence and sparkling water, then add the spirit – this way you determine the sweetness and bitterness yourself, glass by glass. As an aperitif before a meal, the lemonade with plenty of ice and a slice of lemon is perfect, non-alcoholic and dry enough to prepare you for the food.

In a cocktail, the essence provides lemon, acidity, and a bitter note all in one, whereas lemon juice and sugar syrup would otherwise be measured separately. A dash in a sour or a non-alcoholic spritz, and the glass has both fruit and edge.

Store the bottle in a cool, dark place. Once opened, it should be kept in the refrigerator and used up promptly – with 3.3 liters of lemonade per bottle, that is quickly done in the summer.

Our tip: For an aperitif, add the lemonade to a wine glass with a sprig of rosemary and a slice of lemon and serve over plenty of ice. The rosemary gives the Bitter Lemon taste a resinous note that suits Sicily.

Origin

The 89Süd manufactory is located in Waldkirch, a district of Winterbach in the Günzburg district of Bavarian Swabia. Flora and Christoph Nieß grow most of their own fruit, herbs, flowers, and vegetables and source their ingredients as regionally as possible. The bitter lemon is the one exception in the range: lemons do not grow anywhere in Swabia, so the organic fruits come from Sicily, from the foot of Mount Etna.

The Syracuse lemon is a Sicilian lemon that, according to 89Süd, is known for its particularly intense aroma. Everything else is handcrafted in the region: boiling down and bottling are done by hand in Waldkirch, from the reduction to the label. The illustration on the bottle was drawn by Flora Nieß herself. The manufactory has been officially organic-certified since summer 2020, and the bitter lemon carries the EU organic seal on the label.

The idea behind all the essences from Waldkirch is: little sugar, lots of flavor. Compared to conventional syrup, the focus is on the intense taste of the fruit, hence less sugar and the highest possible concentration of raw materials.
